Here’s one way to get your kids to eat cauliflower without much of a battle…
Ingredients
- 500g bag frozen cauliflower, defrosted
- 2 eggs
- 1 tablespoon Parmesan cheese
- Handful of grated mozzarella
- Tomato slices
- Sea salt
- Garlic powder
- Oregano flakes
Instructions
- Pulse the cauliflower in a Magic Bullet in small batches, then transfer to a bowl.
- Add the remaining ingredients and mix with a fork.
- Spread the mixture onto a parchment-lined baking sheet.
- Bake at 400°F for 30 minutes.
- Add mozzarella and tomato slices, then bake for an additional 10 minutes.
